Soup for the soul

One thing that's great about autumn is yummy warm soup and this recipe is a favourite of ours.

You may be able to make this yourself, or ask an adult to help you out. It’s easy, delicious and makes heaps to share!

No fuss vegetable soup

Ingredients:

  • Two carrots, chopped into about 2cm cubes
  • One potato, diced into about 1cm cubes
  • One kumara, diced into about 1cm cubes
  • Three sticks of celery, diced into about 1cm cubes
  • One large onion, finely chopped into little pieces
  • ½  garlic finely chopped into little pieces
  • 400g can chopped tomatoes 
  • 200g frozen mixed peas and beans
  • One packet of soup mix (pick your favourite flavor)
  • Eight cups of water

Optional:

  • add cooked chicken or bacon / ham if you prefer meat-based soup, or
  • add quinoa or lentils for a vegetarian boost, or
  • add super foods such as kale or salmon for a healthy immune booster.

Method:

Mix the soup mix well with the eight cups of water, into either a slow cooker or large saucepan on a low heat.

Add the remaining ingredients, except for the frozen peas and beans (add these towards the end). If using a slow cooker, set it on low and cook for five hours, adding the frozen veges for 20 minutes at the end.

If you're using a saucepan, simmer for two-three hours on a low heat, stiring occasionally. When the veges are cooked to your liking, add the frozen veges and simmer for a further 10-15 minutes or so until they are cooked.   

Serve with toast, crumpets, or baguettes and enjoy!
